Sausage, Potato, and Shallot Roast with Arugula and Spinach

This definitely falls under the ridiculously easy and delicious category!

Adapted from Food & Wine via The Smitten Kitchen
  • 1.75 – 2  lbs. mixed unpeeled potatoes cut into reasonable size pieces*
  • 10 medium shallots, peeled and “chunked”
  • 1.5 – 2 lbs. fresh hot italian chicken sausage, cut into thirds
  • 5 oz. container baby arugula & spinach mix
  • 1 lemon
  • extra virgin olive oil

Preheat oven to 425°. On a large rimmed and foil-lined baking sheet, toss all of the potatoes with the shallots and olive oil. Season with salt and pepper. Roast for about 15 minutes, then toss and add sausage. Roast another 25-30 minutes, until the potatoes are tender and the sausage is cooked through.

Transfer to a large platter or bowl. Toss with arugula & spinach, squeeze 1/2 lemon (or more) over, toss again, season with additional salt and pepper if needed.

*our Whole Foods sells the perfect little mixed bag, just cut in half

What I changed

I found this on The Smitten Kitchen originally so the changes are to that version of the recipe.

  • peeled shallots, unpeeled may be pretty, but no one wants to eat a shallot peel
  • hot italian chicken sausage instead of sweet italian pork sausage
  • baby arugula & baby spinach instead of arugula only
  • olive oil, best judgement

What I might do next time

  • make a lemon and mustard vinaigrette to toss with instead of just lemon, but the lemon is really delicious and it probably doesn’t need the mustard (sigh) so never mind, I’ll probably make it the same way again.
  • or…. use a wurst and then definitely make a lemon and mustard vinaigrette!
  • it occurs to me that smoked sausage would work really well too, you would probably only need to add it to the pan for the last 15 minutes?

    Heather, I’m Gloria, married to Ken, who live next door to your Mom & Dad in San Diego. We just had your sausage, shallots and potatoes for dinner tonight!! It was so delicious and we have some leftovers, thank goodness. I will definitely make this one many times! Love the lemon juice, and I used mild Italian sausage-perfect for us. Thanks so much for sharing this receipe.
